1 cup diced onion
1 cup diced bell pepper
1 cup diced celery
1 cup uncooked rice
2 tablespoons butter
1 can chicken broth
4 ounces can sliced mushrooms
1/2 cup water
Lightly brown first four ingredients in butter. Stir in remaining ingredients, bring to boil. Simmer (keep covered) for about 35 minutes, or until the rice is tender.
