
Both the Road’s End Restaurant and the Copper Mine Restaurant used homemade salad dressings. Most of the following recipes were used in both restaurants. Some recipes are for large portion, scale down if you desire a smaller amount.
1 can tomato soup
1 teaspoon paprika
2 tablespoons vinegar
2 teaspoon dry mustard
1 teaspoon minced onion
1 teaspoon salt
1/3 cup honey
1/4 cup lemon juice
2 teaspoons Worcestershire sauce
3/4 cup oil
Garlic (to taste)
Blend
together all ingredients except oil and garlic. Gradually add oil,
then garlic to taste. Mix well. Pour into jar, cover tightly
and store in refrigerator. Shake well before using on salad.
